Perfect Prime Rib

Tired of turkey after Thanksgiving. Prime Rib is usually on sale at Christmas time, but still expensive for the Cheapskate Dieter. Prices are usually in the $9.00 to $10.00 per pound range, but at Christmastime can be found as low as $3.95 per pound. Splurge a little and try this recipe. Follow the directions below for a Perfect Prime Rib Christmas Dinner.
  • 1 Standing rib roast of either prime or choice quality. (Size of roast will depend on the number of guests. Allow eight to ten ounces of uncooked meat per person.)
  • Extra virgin olive oil
  • Steakhouse seasoning
  • 1 Bulb of Garlic
  • Kosher salt to taste

Allow the rib roast to come to room temperature. In order to make it happen with a piece of meat this size, you must take it out of the refrigerator from the moment you wake up on Christmas morning.

  1. Preheat oven to 375 degrees.
  2. Brush the top of the roast with olive oil and season with salt and steakhouse seasoning.
  3. Put roast in oven and leave alone for one hour.
  4. At the end of the hour turn off heat but DO NOT OPEN THE OVEN DOOR. The roast must sit for at least two hours before turning the oven back on. It can, however sit longer.
  5. When guests arrive or whenever it is appropriate, turn the oven back on to 375 degrees. From the time you turn oven back on, roast 35 minutes for rare, 40 minutes for medium rare, 45 minutes for medium and 50 minutes for well done.
  6. Allow roast to rest for 15-20 minutes before serving.
